We are smack dab in the middle of spring break and after running around with the kids all day, I don't feel much like cooking. So here's an easy dinner.
Chicken and Rice
pieces of chicken or chicken breasts or tenderloins
one package seasoned long grain and wild rice OR plain white rice
one envelope of onion soup mix
one can cream of chicken soup
water
Grease a pan (I use a 9x13 cake pan usually). Sprinkle rice (or mixture of rice) into the bottom of the pan. Sprinkle half of seasoning packet (if there is one) all over rice. Sprinkle half of onion soup mix over rice. Spoon about half of cream soup strategically on rice. Place chicken pieces on top. Sprinkle on remaining seasoning packet, onion soup mix and cream soup. Add water up to about halfway up the chicken. Cover with foil. Bake at 350 for an hour and half.
