This is a recipe I first tried at a potluck and liked so much, I came home and looked up a recipe on the internet. It's a great way to use up leftover chicken or you can start from scratch. It's become one of Hubby's favorite dishes. I hope you like it too.
Poppy Seed Chicken
4 -5 cups chopped cooked chicken
1 can cream of chicken soup
1 cup sour cream
1 1/2 cups crushed snack crackers (like Ritz)
1 teaspoon poppy seeds
1/2 cup butter or margarine, melted
Preheat oven to 350 degrees.
Place chicken into greased 13 x 9 pan. Mix together soup and sour cream in a small bowl. Pour over chicken. In a separate bowl, mix together crushed crackers, poppy seeds, and butter. Sprinkle over the chicken mixture.
Bake 30 minutes until top is browned and sauce is bubbly.
