I love it when I feel all economical and homemaker-y because I just spent the day doing stuff that fills my freezer with convenient, yummy food. Don't you?
If you haven't tried making these yet, you really should. Ummmm. You really should.
You can go from a pile of freshly washed potatoes to baked potatoes...
You can scoop out their innards and have a lot of empty shells waiting to be filled with yummy goodness...
Which will of course be a bunch of good stuff mixed with their innards and mashed all together.
And they'll be so grateful, they'll just melt with love for you. Well, the ones you fix for dinner that night will. The others will be anxiously awaiting their chance...
In the freezer.
Unless you washed too many. Then you can have them in Loaded Baked Potato soup for lunch the next day. Ummm. Loaded Baked Potato soup.
Make sure you wash too many.
P.S. I must once again stress the importance of cooking with ugly pans. It just makes everything taste better.
