Monday's Menu

I tried these bars a few weeks back. They were pretty yummy. In fact, they were gone by the next day in our house. It sounds like it might have been a Tupperware recipe or some other kind of dish of that nature. It uses the microwave rather than a saucepan or the oven.

I hope you enjoy these too.

Oh Henry Bars

2 cups quick cooking oats
1/2 cup butter/margarine
1/2 cup brown sugar
1/4 cup light corn syrup
1/3 cup chocolate chips
2 Tablespoons peanut butter

Combine oats and butter in 2 quart glass bowl. Microwave on high, uncovered, 3 or 4 minutes or until heated through. Stir in brown sugar and corn syrup. Microwave on high, uncovered, 1 1/2 to 2 1/2 minutes or heated through and sugar is dissolved. Turn into greased 10 x 6 baking dish. Press evenly in dish. Place chocolate chips in 1 cup glass measure. Microwave on high for 1 to 2 1/2 minutes or until chocolate is glossy, stirring once. Stir until smooth. Blend in peanut butter. Spread chocolate mixture over bars. Refrigerate until chocolate is set.
