Monday's Menu

 The other night was a leftover night. I had a pretty busy day and, while I actually wouldn't have minded making dinner itself, I didn't have anything planned and couldn't really come up with anything that I felt motivated to make and had ingredients ready to go for.

Fortunately, one of the blessings of eating at home most nights is that the fridge usually has leftovers. And, even though we clean them out pretty quickly for lunch, this particular night, we still had some choices.

A lot of the choices were sandwich type things so I whipped up some homemade onion rings to go with them. They are actually pretty easy to make and I had forgotten just how good they are.


After mixing up the batter, you can slice your onion up and rinse it off. Once they have drained well, you dip them in flour and then in the batter. You can put them back into the flour if you wish at them point but since I was working quickly, I went straight to the oil.


 Even if you're cooking them in a small pot of oil like I was, they are still pretty fast to make. 


You can make them a little healthier by using coconut oil to fry them in. But, hey, it's not like you're having them every night right.  


So make up a batch and impress your family. They'll think you're just as awesome as your onion rings! :)


All-Purpose Batter

1/4 cup flour
2 Tablespoons cornstarch
1/4 Tablespoon baking soda
1/4 Tablespoon salt
1/4 cup water

Mix together oil and water. Add salt, soda, cornstarch and flour. Mix until smooth, whisking if possible. Should be the consistency of pancake batter.

For Onion Rings:

Slice onion as thick or thin as you prefer. After rinsing and draining, dredge onion in flour then dip into batter and cover. You may shake off excess batter and dredge again in flour or bread crumbs, if you wish, or just put battered onion ring into oil that has been preheated to 350 degrees. Flip over when bottom has browned to desired doneness. Remove and drain on paper towels. Keep covered with a clean towel to keep warm while repeating process to cook all the onion rings. Serve immediately.
