The other night was a leftover night. I had a pretty busy day and, while I actually wouldn't have minded making dinner itself, I didn't have anything planned and couldn't really come up with anything that I felt motivated to make and had ingredients ready to go for.
Fortunately, one of the blessings of eating at home most nights is that the fridge usually has leftovers. And, even though we clean them out pretty quickly for lunch, this particular night, we still had some choices.
A lot of the choices were sandwich type things so I whipped up some homemade onion rings to go with them. They are actually pretty easy to make and I had forgotten just how good they are.
You can make them a little healthier by using coconut oil to fry them in. But, hey, it's not like you're having them every night right.
All-Purpose Batter
1/4 cup flour
2 Tablespoons cornstarch
1/4 Tablespoon baking soda
1/4 Tablespoon salt
1/4 cup water
Mix together oil and water. Add salt, soda, cornstarch and flour. Mix until smooth, whisking if possible. Should be the consistency of pancake batter.
