Monday Meal

I had to actually look through my cookbook for an idea for today's recipe but something finally jumped out at me. I am hoping, hoping, hoping for a call that we have been reviewed today so I may post again. Until then, try out this good stuff. Especially if you like Mexican food. It's great just by itself or with a vegetable. You could also have it on the side I suppose. Just plan on leftovers.

Mexi-melt Casserole

1-2 lb. ground beef
1 med. chopped onion (which I almost always forget)
1 bag crushed tortilla chips (take out your frustrations)
1 envelope taco seasoning mix and water to prepare
1/2 lb. grated cheese OR sandwich slice cheese
1 can cream of chicken (or other) soup
1/2 cup milk

Preheat oven to 350. Cook and drain the ground beef and onion. Follow directions on taco seasoning packet to make taco meat. Grease a casserole dish. Put half the bag of crushed tortilla chips in the dish, covering the bottom. Add about half the ground beef mixture. Spread about half the cheese over the ground beef. Sprinkle the rest of the ground beef on top of the cheese. Spread the remaining cheese on top of that. Mix together the soup and milk. Pour over the layered cheese and beef, spreading it out. Bake for about 10 minutes. Remove from oven and cover with remaining tortilla chips. Bake for 10 more minutes or until chips start to brown.

You could probably make as many layers as you like. You could also make a larger or thicker one too. Just remember to adjust the time.
