I wanted to add to the last post this suggestion: print a list of your lunch box ideas and place it on the inside of your cabinet door. That way, when you are catatonic in the morning (like me) you don't have to think. You can just glance at the list and pick something.
I also wanted to point out that the recipe for Cake Mix cookies is a great one to do with younger children. It involves so few ingredients that they can get into mixing it up and making them.
