Monday's Meal

I mentioned to Hubby last night that I wasn't sure what recipe to put up today. He said I should do the one we had for dinner last night. See, it was good. I hesitate though because it requires the purchase of a convenience food and that is probably the only downfall. But I will share it because it always turns out so well. And we love having it. All of us. No complainers. It is also very quick and easy. So here you go.

Chicken Parmigiana (my way)

breaded chicken patties (not chicken fried steak but they are usually in the same area), thawed
spaghetti sauce
shredded mozzarella or parmesan cheese
spaghetti

Preheat your oven to 350. Spray a pan with sides that is large enough to hold the number of patties you want to make. Spread a thin layer of spaghetti sauce in the pan. Place the appropriate number of chicken patties in the pan. Spread spaghetti sauce on top of the patties. You can make it pretty thick if you like. Sometimes I sprinkle on grated parmesan cheese all over the top of the patties. Sprinkle shredded cheese on top of each patty. Layer it on as thick as you like. Just remember you have to get it out of the pan. Bake until the sauce on the bottom is bubbling and the cheese is completely melted.

While it is baking, cook spaghetti and drain. To serve, place a serving of spaghetti on each plate. Put a small amount of spaghetti sauce on the spaghetti. You can also sprinkle on some grated parmesan here too if you like. Then place a patty complete with some of the sauce and the cheese on top. Serve to dutifully impressed family members with garlic bread if you want.
