Monday's Meal

Sorry for the late hour of the post. I was seeing my mother off after a Thanksgiving visit and am just now getting to it.

I thought I'd share some ideas for using up that Thanksgiving turkey. We had a 21 pound bird and with only 5 people to eat it, we enjoyed a lot of leftovers. Actually, that's one of the reasons we always try to find the largest turkey we can (at a sale price of course).

So here goes:

*The obligatory Thanksgiving turkey sandwich (Hubby likes to chop it up and mix it with barbeque sauce then warm it up in the microwave).
*How about a turkey pot pie?Just substitute turkey for the chicken. We've already had one of these this weekend.
*Chop it up and mix it into macaroni and cheese.
*Tetrazzini -- we had it tonight. Yum!
*Try some turkey and dumplings. Mix up some biscuit dough, pinch off pieces, and drop them into boiling broth.
*Turkey noodle soup -- again substituting turkey for the chicken.
*Chop it up and freeze it in one-cup portions for use in other recipes.
