Monday's Menu

Strawberries seem to be in season and, while I don't like strawberries (yes, I know... so sue me already), I have on occasion made this for a potluck or gathering. Not only does everyone seem suitably impressed when I unveil it, but I always get rave reviews after they've eaten it as well. The idea comes from an old Tupperware recipe card and I, of course, changed the recipe to suit me. Here's a picture of the original card though so you can see how pretty it can be.



I never make it into any shape other than a rectangle, but it is still very nice and even elegant. I usually use homemade sugar cookie dough. The easiest way to cut it into slices to serve is with a pizza cutter. And if you're taking it to a gathering, just bring it on a disposable tin or cake board. Trust me. The host will love you. And you won't be taking any home anyway.

Here's how to do it.



Strawberry Cookie Cake

1 recipe sugar cookie dough or 1 20-ounce roll refrigerated sugar cookie dough
1 cup chocolate frosting
2 cups sliced strawberries
1 block cream cheese, softened
appx. 1/4 cup powdered sugar

Lightly grease a baking sheet. Shape cookie dough into preferred shape. Bake cookie following directions (usually about 350 degrees for around 15 minutes or until golden). Allow to cool completely. Mix together cream cheese and enough powdered sugar to sweeten to taste. Spread onto cooled cookie. Layer strawberry slices on top of cream cheese. Using a pastry bag, pipe chocolate frosting shells along edges. Refrigerate until serving. Refrigerate leftovers.

If desired, you can also drizzle melted chocolate or Magic Shell type ice cream topping on top of strawberries.

I have a similar recipe from Pampered Chef for "fruit pizza." It's a very popular dish, like yours.

And yes, I do think your crazy for not liking strawberries:).
