Monday's Menu

Last week, some friends came to stay with us for a visit. We were all very excited and looked forward to their visit. The Chick even decided to make a dessert in honor of their visit.

She looked around and finally decided on Chocolate Chip Cheesecake. Originally, the recipe calls for a brownie crust but I didn't really care for it. Because you cook it first, then cook the cheesecake, it ended up kind of dry once you hit the brownie. I would instead just use a regular graham cracker crust for the best result.

To make the cheesecake itself, follow the recipe below.

Chocolate Chip Cheesecake

3 (8 ounce) packages of cream cheese, softened
1 (14 ounce) can sweetened condensed milk
3 large eggs
2 teaspoons vanilla
1/2 cup mini chocolate chips

Preheat oven to 350 degrees. Prepare crust as desired. In large mixing bowl, beat cream cheese until fluffy. Add sweetened condensed milk and mix well then add eggs and vanilla, mixing well. Stir in chocolate chips. Pour into prepared crust.
Reduce oven temperature to 300 degrees. Bake 50 minutes or until set in center. Cool then chill thoroughly. Garnish as desired.

I make only one cheesecake, and it's chocolate chip! But my recipe has an oreo cookie crust...just crushed oreos (cream and all) and butter to hold it together. Very yummy.
Of course now I have only limited access to cream cheese so I don't see a cheesecake in our near future.
