Monday Meal

I worried for nothing. I asked God to please, please, please make a path. And in His usual way, He provided above and beyond our expectations. We had decided to go to Immigration today to take in the paperwork I thought I was supposed to include with my letter about renewing our Petition to Adopt. We also had hoped to get a fingerprinting appointment for before it expired so we wouldn't have to pay the fees. Not only did they not need the extra paperwork but they also went ahead and did our fingerprints while we were there. Got everything done in 30 minutes. At a government office. And they were all wonderful and treated us very nicely. If that isn't God, well, nothing will convince you. So its done! Yayy! Now we wait for our home visit on Friday. And hopefully news on the review from China. Oh, happy day. And thank you God!

As promised, here is the chicken soup recipe I told you about. You can see the original here. Both kids cleaned their bowls and one even asked for more (AND IT HAS VEGETABLES IN IT).

Quick and Easy Chicken Noodle Soup

  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 4 (14.5 ounce) cans chicken broth
  • 1 (14.5 ounce) can vegetable broth
  • 1/2 pound chopped cooked chicken breast
  • 1 1/2 cups egg noodles
  • 1 cup sliced carrots
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
Here's what I did:
Saute the onion celery and carrots in the butter. Add to broths (my chicken broth was made from bouillon rather than canned). Stir in remaining ingredients except noodles. Simmer about 20 minutes. Wait to cook the noodles until you are about ready to serve. Otherwise they get mushy. You could also freeze it without the noodles and then just add noodles when you thaw and cook it.

For the soup, how do you cook the chicken that goes in it?

You can cook it however you would like -- boil, leftover rotisserie or baked, etc.
For mine, I cut it up and then just cooked it in a skillet, stir fry style I guess.
I suppose you could probably use canned as well but I don't think it would be as good. :)Let me know if you try it.
