Monday's Meal

This is a recipe I found recently and we all seem to like it pretty well. So I thought I would share. Ten minutes was really all my oven needed to make a nice soft cookie. Hope you like them too.

Peanut Butter Oatmeal Cookies

1/2 cup shortening
1/2 cup butter or margarine, softened
1 cup brown sugar
3/4 cup granulated sugar
1 cup peanut butter (smooth or crunchy)
2 eggs
1 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick cook oats

Preheat oven to 350 degrees.
Cream shortening, butter or margarine, brown sugar, granulated sugar, and peanut butter. Beat in eggs, one at a time. In a small bowl, combine the flour, baking soda, and salt. Stir into the creamed mixture. Mix in oats until combined.
Drop by teaspoonfuls onto ungreased cookie sheet or baking stone.
Bake for 10 to 15 minutes in oven. Store in airtight container.
