Monday's Meal

Actually this is more of a snack. I imagine you could use just about any cereal of similar ingredients and size. I have never actually made them with peanuts in them. Nonetheless, they always disappear very quickly. It's probably a better choice for an after school snack than, say, cookies or chips but I've never looked at the nutritional information. Make sure to store them in an airtight container. I usually don't stack them unless I put wax paper between them to avoid sticking together.

Cheerio Bars

1 cup peanut butter
1 cup sugar
1 cup honey
6 cups Cheerios or similar generic cereal
Salted peanuts (optional)

Bring sugar and honey to a boil in 2 quart saucepan. Remove from heat; stir in peanut butter until blended smooth. Pour in cereal and mix until well coated. Spread into a buttered 9x 13 pan; press. Allow to cool. Cut into squares.
