Monday's Menu

Well. It's heating up outside. And you know what that means. No one wants to turn on the oven. So if you want cookies, it's the no-bake variety that jumps to the top of the list.

Most likely everyone has made these at some point in their life. And there are about a zillion different variations. Some people add peanut butter or more vanilla or less margarine or more sugar. Some people use baking chocolate or chocolate chips.

I usually make these, and then, if they still seem a little wet, I add another handful of oatmeal. They are super easy and kids love to make them too.

So if you lost your recipe or just needed to be reminded that there was such a thing, here's one for you.



No-Bake Chocolate Cookies

1/2 cup milk
1/2 cup shortening or margarine
6 Tablespoons cocoa
1/4 teaspoon salt
2 cups sugar
1 teaspoon vanilla
3 cups quick cooking oatmeal

Heat all ingredients except oatmeal in a saucepan, mixing together well. I like to whisk it together. Bring to a boil. Boil one minute. Remove from heat. Stir in oatmeal (if you want to throw in some peanut butter, now is the time to do it). Drop by spoonfuls onto wax paper. Allow to cool and firm up. If you have problems, you might also pop them in the fridge for a few minutes to help them along but don't do that unless you have to.

I am one of the few people in the world who hasn't made these. And I generally have all the ingredients on hand. I'll definitely have to try them...in two weeks, when I get back home from Gaga's and Impact!
