Monday's Menu

These are what we had for breakfast yesterday. And we happily ate the leftovers for breakfast this morning as well. The 'orange' flavor is not really even noticeable so if you want it to be, I would suggest adding extra zest. Or perhaps some orange flavoring. I believe this recipe originally came from allrecipes.com.


Orange Muffins

2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar
1 Tablespoon orange zest
2/3 cup orange juice
1/2 cup melted butter or margarine
2 eggs
1/2 cup finely chopped walnuts (optional)
Topping:
1 Tablespoon melted butter or margarine
1/4 cup packed brown sugar
1/2 teaspoon cinnamon

Combine flour, baking powder, baking soda, salt, sugar, orange peel. Stir in orange juice, 1/2 cup melted butter, eggs, and chopped nuts. Pour into 12 muffin cups.
Blend 1 tablespoon melted butter, brown sugar and cinnamon. Sprinkle onto tops of muffins.
Bake in preheated 350 degree oven for 20-25 minutes.
