Monday's Menu

Might as well keep going with the ice cream accompaniments, right? I can't help it. It's too hot to talk about making bread or roasting something for hours.

I actually worked for two Baskin - Robbins establishments as a young woman. One of my favorite sundaes is a cross between a Banana Royale and a Brownie sundae. It involves a sliced banana, a brownie, ice cream, fudge, and whipped cream. Of course, they only sell one or the other -- not both (but they should). So let me help you try it out.

I have a recipe for Double Chocolate Walnut brownies listed. This however is a little bit simpler and doesn't require as many extras. In short, it is a basic brownie recipe. You can throw in a half a cup of nuts if you like but it doesn't need them. Which makes it good for people with allergies or who dislike nuts.

I think I originally got it over a decade ago from the back of a can of cocoa. They just used to put the best recipes on the backs of cans. Wonder why they stopped? Seems like all the ones now start with a bunch of convenience foods and aren't all that great. Oh well.



Fudgy Brownies

1/2 cup shortening or butter/margarine
1/2 cup cocoa
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup all-purpose flour
1/4 teaspoon salt

Preheat oven to 350 degrees. Melt butter/margarine/shortening in a saucepan or large bowl. Add cocoa mixing well. Mix in sugar. Add eggs, one at a time, stirring well. Add vanilla, flour and salt. Pour into greased 8x8x2 pan. Bake 20-30 minutes until pick inserted comes out clean.
