I have posted a recipe for Indian tacos once before. You can find that here. Those make me think of State Fairs and summer festivals. This is a recipe for something kind of similar. Only in these, when you make the 'fry bread,' you leave it soft enough to fold like a taco.
This is supposed to be a copycat of a Taco Bell favorite, the chalupa. We also like the version at Taco Bueno too. They call theirs a muchaco. Marketing aside, they are essentially the same thing -- a taco wrapped in a soft fry bread rather than a crunchy shell or tortilla. And they are all pretty darn good.

Be aware that this version is not as soft. It likely lacks whatever chemical they add to theirs to keep it soft. And gains yet another benefit of making your own. :) Enjoy!
Copycat Taco Bell Chalupa
Fry bread:
2 1/2 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 Tablespoon shortening
1 cup milk
Oil for frying (use a little coconut oil to make it healthier)
Filling:
1 lb. seasoned, cooked taco meat
sour cream
shredded lettuce
shredded cheese
diced tomato
chopped onions, if desired
For fry bread mix dry ingredients together. Cut in shortening using a pastry blender. Mix in milk. Shape dough into a long cylinder. Cut into 8 equal parts. Work each section into a 6-inch circle. Fry in oil until golden brown. Drain on paper towels.
Build chalupas with fry bread. Add fillings desired and top with salsa or hot sauce. Fold fry bread into taco shape to eat.
