Monday's Menu

Have you gotten your Christmas candy made yet? We did several things last week. Pictured above are Fantasy Fudge, Oreo Truffles, and Peppermint Bark. I didn't make any peanut butter balls yet. There was a time issue. But if I don't make them before Christmas, I'll almost certainly have to after we get back. Those are 'gotta have' every year.

The Oreo Truffles are a new addition this year. They are super easy and very yummy. You pretty much roll together crushed sandwich cookies and cream cheese...

then cover them in chocolate.

The white chocolate stripes would have distinguished them from the peanut butter balls if I had made any yet.

This would be a kid friendly recipe too although a parent might want to do the chocolate dipping.

Oreo Truffles

1 16-ounce package or Oreo sandwich cookies (or a generic brand), crushed
1 8-ounce package cream cheese, softened
Dipping chocolate
White chocolate, sprinkles, or other topping

If you wish to sprinkle cookie crumbs on top of the finished truffles, reserve approximately 9 cookies, crushed, set aside in a bowl.
Mix crushed cookies and cream cheese until well blended. Roll into balls. Set aside.
Melt dipping chocolate and cover each truffle. Decorate with crushed cookies or sprinkles while chocolate is still melted. Refrigerate until chocolate has hardened. Store in airtight container at room temperature.

I make these every year and always have requests for them at Christmas from my friends! YUMMY!
This year I am having to make FIVE batches!!! AAAAHHH! Merry Christmas!

Okay, I actually made these this year, and it was fairly disastrous. It all seemed so simple...but my oreo "dough" mix was too squishy and didn't make good balls. (I chilled it for awhile; should have chilled it longer maybe). And maybe I got the wrong chocolate. My sis-in-law said chocolate bark and the only kind they had at Publix was something specifically for making candy. It was a little too quick drying. AND (yes, there's more), when I dipped them in the chocolate, way too much chocolate came out on the ball, even though I used a fork to take them out, and then the chocolate made a puddle on the wax paper and dried that way.

This is why I will never be Martha Stewart.

They were still delicious, but it was a little disappointing. I wanted to make them for the New Year's eve party, but now I don't want to debut the ugliness:).

Any suggestions?
