This is a recipe that I believe I got from the back of a chili can several years ago. I've always liked it but it does require some convenience ingredients. It's a nice dish to make on a cold day to warm yourself up.
Chili Pie
1 pkg of corn muffin mix (Jiffy is my favorite that I always use)
1/2 cup shredded cheddar cheese
1 15-oz. can chili with beans
1 onion, chopped
1 8-oz. can corn, drained
Prepare corn muffin mix and spread in greased deep dish pan. Sprinkle 1/4 cup cheese on top of crust. Blend chili, onion and corn. Spread on top of cheese and crust. Top with 1/4 cup of cheese. Bake at 400 degrees for 20 minutes.
