Happy, Happy Birthday Baby!

Today is I Have to Say's Recipe Box Swap. Below is my recipe addition. For lots of great recipes, check it out. There's always a lot of good ones.



Today is my darling's birthday! I won't tell you how old he'll be. He might get me. But I will say that after 17 years of marriage, I love him more each day.

And I'm very happy that he was born on this day long, long ago. Oops. He might get me for that one.

This year, I'm making a red velvet cake for him. I've never had red velvet cake much less made one so I won't share that recipe just yet. But last year, I called his mom and asked how to make this cake that I knew he really liked. So actually, this is her recipe although I don't know where she might have gotten it from. I have heard of other versions though so I'm thinking it must be one of those Southern comfort foods that get passed around. Too bad I don't like pineapple. I hope you like it though.


7-Up Cake

1 box pineapple cake mix
1 box pineapple instant pudding (or french vanilla if you can't find pineapple)
3/4 cups oil
4 eggs
1 10 oz. 7-up

Mix well. Pour into 3 9-inch pans. Bake at 350 degrees until done.

Frosting:
1 1/2 cups sugar
2 Tablespoons flour
1/2 cup butter or margarine
1 20-oz. can crushed pineapple (juice included)
2 eggs

Mix together in a saucepan. Cook (stirring well) until thick. Add one can Angel Flake Coconut. Let cool. Frost layers.

I love this cake. My grandmother used to make it and it is so very good. Of course, if I make it, I would have to eat it alone b/c Jesse won't eat pineapple and Katie is allergic to eggs and Hannah is just picky. Maybe Elijah and I could eat it. Giving a baby half of an enormous cake is good parenting, right?
