As I've mentioned before, our children take turns each week on Thursday choosing a menu and preparing a meal within a budget.
A few weeks ago, the Dude had dinner at a friend's house and was introduced to stuffed pasta shells. The friend's mother called it manicotti. This week the Dude decided he wanted to make manicotti for his meal. So we emailed Mrs. Alexis and requested the recipe. He purchased what he needed (staying well within his budget) and prepared this yummy dish.
He used actual manicotti shells and we even had enough to put a few in the freezer. I am not normally a fan of ricotta but this had Parmesan and mozzarella mixed in and it was quite good. The garlic bread is simply a diagonally sliced Italian bread loaf with this garlic butter spread on and toasted.
He's turning into quite a little chef. Now, I can't wait to see what the Chick will come up with next week.
