Monday Meal

Yesterday, I had on my air conditioning, we were wearing tees, capris and shorts. This morning I got up and checked the thermostat -- it was 41 degrees outside. What is that!?! So I'm eating chili and I thought I would share the recipe. My daughter likes Wendy's chili and this one and she says they are comparable. I, however, do not like Wendy's chili, but like this one very much. I don't know. I'm not trying to figure it out. When I get to Heaven, I'll ask God.

Because I am by nature lazy, it is a 24 hour process. But it doesn't have to be and I have proven it on the rare occasion. So enjoy and stay warm.


Homemade Chili

1 lb. bag dry kidney beans (or preferred type)
1-2 lbs. ground beef or ground turkey
1 1/2 t. salt
1 1/2 t. black pepper
1 1/2 t. -3 t. chili powder
1/4 t. garlic powder
1 med. onion, chopped
2 8 oz. cans tomato sauce
2 cans water

This is what I do: Soak the beans after supper. Before bed, put the beans in a crock pot with fresh water and let cook overnight (whilst I slumber). In the morning, turn them off if they're done and let them sit and cool. That afternoon, before dinner, cook and drain your ground meat and onions. Drain and set aside. Drain the beans into a colander. Wash out the now thoroughly cooled crock pot. Dump in the drained beans, meat and onions. Add everything else. Stir well. Let cook at least an hour but longer if you can. You can add an extra can of water if you need to depending on the shape of your crock.

I have never tried using canned beans but I suppose you could if you drain and rinse them.

Wow, I don't think I have EVER cooked dry beans. It sounds easy, though. Usually when I do chili, I just get cans and pour everything into the pot (well, I guess I have to brown the meat first). It probably wasn't as good as yours, though.

I like Wendy's chili, but I think they put green bell pepper in it. Maybe that's the difference?

It is really easy.

Wendy's chili seems more watery to me in addition to the green peppers. I think that's why I don't care for it but who knows.

I soaked the beans and now they are in the crock pot. this is making me hungry because I smell them in my sleep. I can't wait until tomorrow to make my (your) chili. thanks....
