Monday Meal Messup

Again!?!

We had a home school meltdown on Sunday night. Monday was...not easy. We have pretty much come to the conclusion that unless things change dramatically -- REALLY dramatically, the Chick will be going back to private school next year. I think part of it might be some of her curriculum but for the large part, I'm just not very good at it. But we'll see. I'm praying about it and we're working on things.

Can you handle a Tuesday Meal? I mean, it isn't alliterative and all but you'll still get your recipe, right.

December is usually cookie swap time so you might want to make note of this one. This recipe makes a huge amount so I'm going to half it for you. I found it in one of those old local cookbooks. It was submitted by a school cafeteria lady so that tells you what a large recipe is. But they freeze well and are perfect if you are going to make a bunch for the prison ministry or something.

Peanut Butter Cookies

1 2/3 cup peanut butter (creamy or crunchy)
1 1/3 cup shortening
3 eggs
3/8 teaspoon salt
3/8 teaspoon baking soda
1 1/4 cup brown sugar
1 1/2 cup sugar
2 1/4 cups flour
1/2 Tablespoon vanilla

Cream sugars, peanut butter, and shortening. Add eggs and vanilla. Add dry ingredients sifted together, mixing well. Roll into balls and place on greased pan. Flatten with fork dipped in sugar. Bake at 375 degrees for 8 or 9 minutes.
