Monday's Menu

A couple of weeks ago at home group, our meal theme was "Mexican food." Someone brought a sopapilla cheesecake. I remember reading the title and thinking "Eeewww."

Not so, my friends. :) It was yummy.

Bunco was last week and I was up for food duty. The hostess said she was making taco salads and asked that I bring a dessert. Well, it definitely fit the theme. All I needed was a recipe.

Now if I can just figure out something home made to exchange for the crescent roll dough.



Sopapilla Cheesecake

16 ounces cream cheese
2 cans Crescent roll dough
1 cup sugar
1 teaspoon vanilla
1/2 cup butter, melted
1/2 cup cinnamon sugar


Unroll one package of crescent roll dough and line the bottom of a 9 x 13 pan. Mix together cream cheese, sugar, and vanilla. Spread over crescent roll dough in pan.Unroll the other can of crescent roll dough and place on top of the cream cheese mixture. Spread melted butter over top layer of dough. Sprinkle with cinnamon sugar. Bake at 350 degrees for 30 minutes. Chill.
